Executive Chef : Chris Lee

I have been in the service industry for almost 20 years, starting as a busboy in a Chinese restaurant in Kamloops.  It was there that I realized my passion for cooking – spending more time in the kitchen than on the floor.  After much soul-searching (college years – barely remembered) I decided to embark on a culinary path which led from Kamloops to Vancouver.  I attended DuBrulle French Culinary School in 1994, then worked at various restaurants until ending up at Settebello on Robson, apprenticing under Chef Hans Rutschmann.  I finished my apprenticeship at the Fairmont Hotel Vancouver, under Executive Chef Robert LeCrom and some of the finest chefs in the country.  I worked my way from second cook in the all-day grill to Chef de Partie of the fine dining outlet, medaling in several competitions in various categories including the Karl Shire Apprentice of the Year competition (didn’t win, but was honored to be there nonetheless), and competitions for Apprentices, Professionals and Teams.  I left the Hotel Vancouver in 2000 for a Restaurant Chef position at the Sheraton Vancouver Wall Centre Hotel where I stayed for 3 years working under Executive Chef Andrew Court.  From there, I moved to the Vancouver Golf Club as Sous Chef under Executive Chef Dino Renaerts where I was eventually promoted to Executive Chef.

I am excited to bring to Swaneset an absolute dedication to providing the best quality food and service available.  I love to use fresh, local and seasonal ingredients, so expect to see several menu changes and feature items throughout the year.  Also keep your eye out for different feature menus such as Sunday Dinners, Nine and Dine and Pasta Nights. email address
